This Tie Guan Yin has been set to age for about eight years, and is just getting into the best time for appreciation. The heavy roasted smell has volatilized, while the varied flavor transformation and mellow mouthfeel forms. The front taste of this tea is temperate orchid scent and ripe fruit sweetness, followed by attractive buttery taste and facile jujube acidity, which is the unique taste of Tei Guan Yin tea tree variety. The acidity appears stronger when tea brew drop in temperature, somehow feel like drinking mid-roasted specialty black coffee. The aftertaste and bouquet of this tea are characteristic and long lasting, unforgettable!

Back to Japanese- occupied period, Tie Guan Yin tea tree was firstly brought to Taiwan from An Xi, China by Chang Nai Miao and Chang Nai Qian brothers, who worked in Mu Zha tea company. Today, due to the local earth, whether and air, even with similar manufacturing process, Taiwanese Tie Guan Yin has shown totally different flavor and characteristics from it used to be.

Nowadays in order to enlarge the capacity, tea gardens in Tie Guan Yin manufacturing area usually need to grow and make Tie Guan Yin with other tea tree varieties, such as Si Ji Chun (Four season tea), Wu Yi and Jin Shuan tea trees. However, to taste the original flavor of Tie Guan Yi, you must choose the so called "Zheng Cong (Original) Tie Guan Yin", which means it is made of Tie Guan Yin tea tree with the traditional method.

The traditional Tie Guan Yin is highly fermented and heavy roasted. The dry tea is heavy. After brewing, you can find the tea leaves are wrinkled and the vein is not in the middle. The tea brew is with an unique sourness and mellow implicit charm, which we call "Guan Yin Yun". Also, there is a saying "Tie Guan Yin can still be fragrant after seven brews", which makes it remain popular after a hundred years!
